Cazuela de Vaca (Chilean Beef Stew)
Cazuela is one of the most comforting dishes in Chilean cooking: a hearty broth with meat and vegetables.
Ingredients
- Beef (osso buco, with the bone in the center)
- Water
- Onion
- Carrot
- Garlic
- Bell pepper
- Corn (choclo)
- Cilantro (optional)
- Salt
- Green beans
- Potatoes
- Squash (zapallo)
- Rice or noodles
Preparation
- Wash the meat well.
- In a pot filled halfway with water, add onion, carrot, garlic, and a small piece of bell pepper to taste.
- Add the meat and the corn together so the broth takes on a corn flavor.
- Optionally add cilantro and salt to taste.
- When the meat is partly cooked, add the green beans cut lengthwise.
- When they soften a little, add the potatoes.
- Let it boil a while, then add the squash.
- Along with the squash, add the rice or noodles.
- Boil for another half hour, until everything is cooked.
- Serve with Chilean salad or lettuce.
