Chancho en Piedra (Chilean Tomato and Chili Salsa)

Chancho en piedra is a fresh, spicy Chilean salsa made with tomato, garlic, onion, and cilantro, traditionally ground in a stone mortar.

  1. Chop the tomatoes, cilantro, garlic, and onion.
  2. Combine everything and season with salt and lemon to taste.
  3. Add chili (ají) to taste. So easy, right!
