Charquicán (Chilean Vegetable and Beef Stew)

Charquicán is a comforting, homestyle Chilean stew made with mashed potatoes and squash, mixed vegetables and beef, topped with a fried egg.

  1. Peel the potatoes and cut them into cubes. Combine them with the squash and cook in warm salted water for about 20 minutes.
  2. Separately, cook the vegetables for about 5 minutes from the moment the water begins to boil.
  3. Meanwhile, heat the oil in a frying pan and fry the onion and garlic.
  4. Add the beef and all the seasonings. Finally, stir in the tomato sauce and let it rest.
  5. Mash the potatoes and squash a little. Add the cooked vegetables and the previous sauté.
  6. Mix everything well and serve with a fried egg.
