Charquicán (Chilean Vegetable and Beef Stew)
Charquicán is a comforting, homestyle Chilean stew made with mashed potatoes and squash, mixed vegetables and beef, topped with a fried egg.
Ingredients
- 3 large potatoes
- 1 cup of squash, cut into cubes
- 1 garlic clove
- 1/2 onion
- 1 cup of mixed vegetables (corn, green beans, peas, carrot), which can be frozen
- 1/8 of ground beef or small pieces of beef
- 3 tablespoons of oil
- Salt and pepper to taste
- 3 basil leaves
- 2 tablespoons of tomato sauce
- Optional: a little chicken broth
- Eggs to serve alongside
Preparation
- Peel the potatoes and cut them into cubes. Combine them with the squash and cook in warm salted water for about 20 minutes.
- Separately, cook the vegetables for about 5 minutes from the moment the water begins to boil.
- Meanwhile, heat the oil in a frying pan and fry the onion and garlic.
- Add the beef and all the seasonings. Finally, stir in the tomato sauce and let it rest.
- Mash the potatoes and squash a little. Add the cooked vegetables and the previous sauté.
- Mix everything well and serve with a fried egg.
