Mote con Huesillo
Mote con huesillo is the most iconic Chilean summer refreshment: dried peaches (huesillos) in syrup, served with husked wheat (mote).
Ingredients
- 1 cup granulated sugar
- 8 huesillos (dried peaches)
- 1 cup mote (husked wheat)
- Cinnamon
- Orange peel
Preparation
- Rinse the huesillos and soak them overnight in water with sugar, cinnamon, and orange peel.
- The next day, bring them to a boil for 1/2 hour.
- Once cooled, stir in 1 cup of burnt sugar (made into a liquid caramel).
- Cook the mote for 30 minutes over moderate heat, then remove and rinse with ice-cold water.
- Serve very cold, with 2 huesillos per person.
