Mote con Huesillo

Mote con huesillo is the most iconic Chilean summer refreshment: dried peaches (huesillos) in syrup, served with husked wheat (mote).

Preparation

  1. Rinse the huesillos and soak them overnight in water with sugar, cinnamon, and orange peel.
  2. The next day, bring them to a boil for 1/2 hour.
  3. Once cooled, stir in 1 cup of burnt sugar (made into a liquid caramel).
  4. Cook the mote for 30 minutes over moderate heat, then remove and rinse with ice-cold water.
  5. Serve very cold, with 2 huesillos per person.
