Porotos con Riendas (Chilean Beans with Noodles)

Porotos con riendas is a traditional Chilean stew that combines cooked beans with a savory chorizo sofrito and noodles, a comforting dish that is very popular in home cooking.

  1. Soak the beans overnight in hot water with a little salt.
  2. Make a sofrito with chorizo, chopped onion, and a little garlic, frying everything together with the chorizo.
  3. Once the sofrito is well fried, add the beans.

  5. When the beans are more or less soft, add the noodles so they cook through, and the beans will be ready.
  6. Serve with pickled onions and, if you like, a bit of seasoning to taste.
